Salmon with Cilantro-Citrus Salsa over Baby Spinach
This is one of my fav healthy recipes. It’s best with grilled salmon but since it’s February I opted for oven broiled. The salsa is usually made with oranges, tomatoes, red onion, and lime juice - only this time I used blood oranges and they were perfect in it! Oh, I threw some steamed broccoli in with the spinach. This is seriously easy and delicious while also being really healthy…as opposed to most of the things I make.
Chili
My favorite chili is a pretty untraditional one that uses ground cumin and coriander as seasoning rather than chili powder. Some may call this sacrilege, others may call this ‘not chili’ but I don’t care; I just call it yummy. It also includes lots of fresh ingredients (corn, red peppers, cilantro), some cheat ingredients (jarred salsa, canned black beans, canned tomatoes, Frank’s hot sauce) and only cooks for about 20 minutes altogether so you can really pick out the individual flavors. I like to add spicy turkey sausage and pepper jack but veggie and vegan cooks can certainly leave those out without missing a whole lot.
Christmas Cookies!
This is by far my fav holiday treat and a Grandma special! It’s just a simple sugar cookie recipe with confectioners sugar and star anise frosting but when decorated and all laid out together they look so pretty. People with strong aversions to black licorice tend not to love them but most people find the anise to be unexpected and delicious.
Mango Raspberry Smoothie with Spinach
I invested in a good blender recently and have been making tons of smoothies ever since. I really like making smoothies rather than buying them because I hate when they are too sweet. This is just frozen mangos and raspberries, an old banana, a splash of cranberry juice, and a handful of baby spinach. It’s a great way to add some more greens and mixed with all the fruit you really don’t taste it!
